How long to dehydrate orange slices

There is no published extension time for whole orange slices — the only citrus number in the record is for peel. NDSU Extension's fruit-drying table covers citrus peel only: take "the outer 1/16 to 1/8 in of the peel", avoid the white pith, and "dry until crisp (8 to 12 hours)". A whole slice is not that. It is rind and flesh in one disc, wet in the middle and waxy at the edge, and no extension service we can find publishes a time for it. Every confident single number you have read for orange slices came from a blog, not from the record.

So the useful answer is the shape of it: at the standard fruit-drying temperature of 140°F, expect whole slices to run at least as long as the 8–12 hours citrus peel takes, and longer for thick ones — the flesh carries far more water than the rind strip that number was measured on. Judge the slice, not the clock. That is not a hedge; it is the same instruction the record gives for every fruit, because "the length of time needed to dry fruits will depend on the size of the pieces being dried, humidity and the amount of air circulation in the dehydrator or oven."

Temperature, and the 135°F question

Fruit-drying guidance sits at 135–140°F, and citrus has a specific reason to stay in that band rather than climb: heat browns the flesh and dulls the rind, so the slices that come out bright are the ones dried slowly. NDSU puts oven drying at 140–145°F to avoid case hardening, a sealed exterior over a wet interior — which on a thick orange round is exactly the trap, because the rind will feel done long before the middle is. If your machine offers only 135°F, use it and add time. If it has no thermostat and runs near 165°F, it is holding jerky temperature over citrus, and that is the one setup that will reliably scorch the edges.

Oven and air fryer

Both work, both change the time rather than the method. An oven on its lowest setting with the door propped runs long and unevenly, and most ovens cannot get down to 140°F at all — check yours with a thermometer before trusting the dial. A Ninja air fryer on a dehydrate setting is a small high-airflow chamber: it will dry a handful of slices much faster than a stacked dehydrator and needs watching, because the same fan that speeds it up will take the rind past golden. Neither is a different recipe; the doneness test is the same in all three.

Cut thin, and expect thickness to dominate

Thickness matters more here than on almost any other fruit, because you are drying two materials at once. Thin, even rounds — the sort you can nearly see light through — dry in a fraction of the time thick ones take and are what makes the difference between translucent slices and leathery ones. Cut them on a mandoline if you have one, keep the tray to a single layer, and do not mix thicknesses on one tray expecting them to finish together.
