How long to dehydrate peaches

Thin slices finish in a matter of hours; halves can take up to 36 — all at 135–140°F. Extension guidance dries peaches at 135–140°F (some methods start at 145°F while the surface is wet, then drop to 135–140°F after the first hour). The spread in time is enormous and it's entirely about how you cut them: at 140°F you might plan ~6 hours for thin slices but as long as 36 hours for peach halves, because a half is a thick, juicy dome of water. The finish line is the fruit — leathery and pliable with no pockets of moisture — not the clock.
Slice thin, or brace for a long halve-dry
This is the single decision that sets your time. Peel and pit, then either slice (fast) or halve (slow). Sliced peaches lose water from a wide open face and finish in a fraction of the time; halves look tidy but trap moisture and run all day and beyond. If you want them done in an afternoon, slice them. Whichever you choose, the temperature is the same.
Pretreat, or watch them brown
Peaches oxidize fast. Extension guidance pretreats cut fruit by dipping in an ascorbic-acid or citric-acid solution — about ½ teaspoon of powdered citric acid (or the ascorbic-acid equivalent) in 2 cups of water — for 10 minutes. Don't leave them longer than about 15 minutes, or the fruit soaks up water and drying takes even longer. Pretreatment isn't just cosmetic: it protects color, slows vitamin loss, and lengthens shelf life.
In an air fryer or oven
An air fryer on a dehydrate setting can dry a thin single layer of peach slices quickly, but the small basket means small batches and a strong fan means watching so the edges don't cook before the centers finish. An oven at its lowest setting, ideally near 135–140°F with the door propped for airflow, runs the same logic and tends to run long. In every case the temperature is 135–140°F and the doneness test is the same leathery, no-moisture-pocket check — the machine only changes the hours.
Condition before you store
Like all dried fruit, peaches should be conditioned after drying — packed loosely in a jar for several days and stirred so residual moisture equalizes across the batch. If condensation appears inside the jar, they need more time. It's the step that decides whether a "done" batch keeps.
