How long to dehydrate pears

At 135–140°F, and the time is set by how thin you slice. Extension guidance dries pears at 135–140°F (a common approach starts at 145°F while the surface is wet, then drops to 135–140°F after the first hour). Pears run like apples and peaches — thin slices finish in a few hours, while halves or thick wedges take much longer because they hold more water. The finish line isn't the clock: cut a cooled piece in half and there should be no visible moisture, nothing you can squeeze out, and no sticky or tacky feel.

Slice thin, and blot

Sliced pieces dry far faster than fruit left whole or halved. Peeling is optional, but do slice evenly and — a small trick extension guidance calls out — blot the slices with a paper towel before laying them on the tray to remove surface moisture up front. Thin, uniform, blotted slices are the difference between an afternoon and an overnight run.

Pretreat to keep them pale

Pears brown when cut. Pretreat by dipping the slices for 10 minutes in a solution of ½ teaspoon of powdered citric acid in 2 cups of water, or equal parts bottled lemon juice and water. Beyond color, extension guidance notes the acid dip also helps guard against harmful bacteria — so it's worth the extra step, not just a cosmetic one.

In an air fryer, oven, or dehydrator

All three run the same 135–140°F logic; only the airflow changes, and with it the hours. An air fryer on a dehydrate setting crisps a thin single layer fast but holds little and needs watching. An oven at its lowest setting with the door propped runs long because it moves less air. A dehydrator sits in between and handles a full load. The temperature and the doneness test — cut, look, squeeze — are identical across all of them.

Then condition before storing

After drying, condition the pears: pack loosely in a jar for several days and stir, so any leftover moisture equalizes across the batch. Condensation inside the jar means they need more drying. Skipping this step is the most common reason a "done" batch molds later.
